What Is the Difference Between Pata Negra and Jamón Serrano?

Jamón Serrano and Pata Negra belong to two different worlds. Serrano ham is made from white pig breeds, while under Spanish regulations the term Pata Negra is reserved for 100% Iberian acorn-fed ham.

Iberian breed alone is therefore not enough: breed purity, diet and farming method all matter. The black seal identifies the highest classification: 100% Iberian acorn-fed ham.
