How to serve Pata Negra and pair it with wine

A simple plate, thoughtful portions and subtle accompaniments: serve Pata Negra and choose wine without overwhelming its flavour.

Sliced Iberian ham with bread and a glass of red wine

Serving Pata Negra does not require a board piled with ingredients. A simple plate makes the ham easier to understand and the tasting easier to enjoy. The first mouthful can be ham alone: accompaniments come afterwards, as an option rather than a requirement.

Start with the plate

Arrange slices without pressing them down or piling them too high. Leave an easy place to pick them up. If serving several hams or cured meats, use different plates or separate them clearly so guests know what they are tasting.

Follow the producer’s instructions when preparing the pack for service. Do not place the plate against a heat source to speed things up. Open and arrange only what you expect to eat, particularly if the tasting will take place in several stages.

How much should you serve?

Quantity depends on the plate’s role. A small tasting before dinner differs from an aperitif that replaces a course. Start with modest portions and keep a second portion to prepare if needed. When other food is on the table, this avoids filling plates that remain exposed for a long time.

Accompaniments that leave room for the ham

  • Plain or lightly toasted bread, served separately.

  • Tomato prepared without excessive salt, if you want a fresh note.

  • A small selection of other products, served at different moments.

Very sweet sauces, strong cheeses and assertive dressings can shift the focus of the plate. They are not forbidden, but should be chosen deliberately: if the aim is to get to know the ham, start with fewer elements.

Which wine to choose

There is no single correct bottle. As a tasting experiment, try a crisp dry white or a dry sparkling wine, seeking a sip that complements rather than dominates. If you prefer red, consider a style that is not excessively powerful. These are tasting suggestions, not universal rankings: the particular bottle and your guests’ preferences matter more than the simple label “white” or “red”.

A small tasting in four steps

  1. Present the ham and allow time to look at it.

  2. Offer a first taste on its own.

  3. Add bread or your chosen accompaniment.

  4. Compare the experience with a sip of wine, without immediately adding more ingredients.

Water should also be available. Wine is optional, and a good plate does not need alcohol to be appreciated.

For convenient serving, choose the hand-carved Pata Negra Oro VNC. For an aperitif comparing ham and anchovies, add the 000 Cantabrian anchovy fillets, serving the products separately before combining them. This gives each ingredient its own moment.
