Cantabrian Anchovies

Cantabrian Anchovies are renowned for their exceptionally meaty texture and intense, distinctive flavour. The cold waters of the Cantabrian Sea create ideal conditions for these fish, which remain in constant movement and develop particularly firm, richly flavoured flesh.

After a period of gentle pressing and maturation under salt, each anchovy is carefully prepared by hand by highly skilled female artisans, following a tradition passed down from mother to daughter. Their delicate touch and meticulous attention to detail are an essential part of the preparation, preserving the integrity of each precious fillet.

The quality of Cantabrian Anchovies is also closely linked to their size. Larger fish allow for more precise filleting and a particularly meticulous removal of the bones, resulting in beautifully clean, generous fillets. This painstaking craftsmanship is one of the elements that sets authentic Cantabrian Anchovies apart.

This Limited Edition is produced in restricted quantities, as availability depends directly on the seasonal anchovy catch in the Cantabrian Sea. The fishing season takes place exclusively in spring, with the traditional auctions concluding on 21 June, when the finest catches are selected by the leading local canning producers.

Larger anchovies are naturally rarer and more prized, resulting in a product of exceptional quality and character. The Triple Zero Limited Edition is further distinguished by a maturation period of at least 15 months. Its extended ageing under salt in traditional wooden barrels develops a remarkably deep and complex flavour, together with an intense aroma and the characteristic deep brown colour of a long-matured anchovy.

To preserve their delicate character and maintain a lower level of salinity than standard preparations, the anchovies are kept refrigerated at 5–12°C. Once opened, they should be consumed within 3 days.
