Classic Baerii Caviar is a true sturgeon caviar made from the roe of the Siberian sturgeon (Acipenser baerii), a species highly appreciated for the quality and consistency of its eggs. Elegant and versatile, it combines a distinctive character with a balanced and refined profile.
The eggs are distinguished by their fine to medium-fine grain, generally measuring around 2.6–3.0 mm, with colours ranging from dark grey to black. On the palate, the texture is soft yet well defined, offering a pleasant, delicate “pop” as the eggs are tasted. Its aromatic profile combines marine and subtle iodine notes with buttery nuances and delicate hints of hazelnut, supported by a balanced umami character and an elegant lingering finish.
A particularly versatile caviar, it can be enjoyed on its own or used in refined culinary preparations. Excellent with mini blinis, potatoes, eggs and neutral crostini, it also works beautifully in more elaborate dishes, where its structure and marine character complement raw fish, shellfish and sophisticated cuisine.
